Is there some way to search across all the Kanji supported by Ringotan? I'm trying to find the 旧字体 version of 亀 (龜) which is listed on KanjiVG but I can't seem to find in any of the lesson sources (including JLPT and Kanken)

I think many (most?) 旧字体 are not supported by Ringotan, including 龜.
I'll leave this open though, because global search is a good idea.
First, I just want to add that I would also enjoy this feature.
In the meantime, I just tried to add a new kanji to the pool I'm studying by switching to the "Most Common First" lesson in settings, doing a custom study, then switching back to my normal lesson (currently Genki). Will kanji introduced this way be scheduled normally along with the lesson kanji going forward?

Yes, as long as you finished learning it (did one complete lesson), the kanji will be added to the review pool
